A home cook has shared her recipe for a one pot creamy Cajun chicken pasta.

Rebecca Lee, from Sydney, posted a now-viral TikTok video showing exactly how she made the comfort dish using penne pasta, chicken breast, paprika, garlic powder, oregano, cayenne pepper, onion, chilli flakes, fresh parsley and parmesan cheese.

‘This was so quick and easy, and so delicious. You have to try it. The pot ended up making five meals,’ she said.

Creamy Cajun chicken pasta recipe

INGREDIENTS

Chicken breast, diced

1 tsp paprika 

1 tsp garlic powder

1 tsp oregano 

1/2 tsp cayenne pepper

1 onion, diced

1 tbs garlic, finely chopped

2 cups penne pasta 

Chicken stock 

1 can diced tomatoes 

2 tbs cream cheese 

Chilli flakes

Fresh parsley, chopped

Parmesan cheese, to serve 

METHOD

Marinate chicken with paprika, garlic powder, oregano and cayenne pepper, stir until evenly seasoned.

In a pan over heat, add olive oil and chicken pieces. 

Once chicken is browned, add onion and garlic, mix until well combined. 

In the same pot, add the dried penne, chicken stock, just enough to cover the pasta and chicken, and a can of diced tomatoes.

Put a lid on and allow it to simmer for 10 minutes, or until liquid evaporates.

Once the pasta is cooked to al dente, stir cream cheese through until evenly combined.

Serve with chilli flakes, fresh parsley, and parmesan cheese.

To make the dish she marinated diced chicken breast with Cajun seasoning, which includes paprika, garlic powder, oregano and cayenne pepper.

‘Give it a little mix and put the lid on for about 10 minutes. You want to cook this through until there’s no more liquid,’ she said.

She served the dish with chilli flakes, fresh parsley, and parmesan cheese.

Her video has since been viewed more than 60,000 times, with many saying they couldn’t wait to try out her recipe at home.
